MEAT DISHES:

Mincemeat (Kheema
Hyderabadi)
Many bachelors studying in US find
it difficult and time consuming to cook, while newly wedded wives
think it is a different and difficult recipe for each dish.So
here is a recipe for a basic mincemeat dish which can be converted
to many more dishes just by adding one ingredient more.Easy cooking
to learners & time savers Insha'Allah!
- Mrs. Batul Fatima
Ingredients:
- Mince meat, 1 kg
- Onions (medium sized), 3
- Ginger paste, 1 tablespoon
- Garlic paste, 1 teaspoon
- Red chilli powder, 1 teaspoon
- Turmeric powder, 1/4 teaspoon
- Salt to taste
- Oil (corn/vegetable/olive), 3 tablespoon
- Green chilies, 3
- Mint leaves, 1/2 cup
- Corriander leaves, 1/2 cup
Method:
- Chop onions.
- Wash mincemeat & drain thoroughly.
- Chop mint & corriander leaves & keep aside for garnishing.
- Heat oil. Add onions & fry till they change color.
- Add ginger & garlic pastes, fry for 1 minute.
- Add mincemeat & mix well. Add the remaining spices &
mix well.
- Cook for 3 minutes & keep stirring.
- Add water just to cover the onions & mince meat. Cover
with lid & cook till tender on almost simmer.
- When water is dried & mincemeat done stirr well with
wooden spoon so that the onions are all mashed up & everything
mixed uniformly.
- When done garnish with corriander & mint leaves.
- Serve hot with roti,chapati(bread) or rice.
Note:
The above can be divided into 4 equal portions to make 4 different
dishes:
Dish 1 -- Mutter Kheema (Peas Mincemeat)
To the above cooked mince meat just before garnishing add
1 cup peas & cook till peas are done.
Now garnish with mint & corriander leaves.
Dish 2-- Aloo Kheema (Potato Mincemeat)
To the above cooked mince meat just before garnishing add
1 medium sized potato (washed, peeled & cut into 1 inch cubes).
Cook till potato is tender.
Add water if need to cook potato.
Garnish with corriander & mint leaves.
Dish 3--Gobi Kheema (Cauliflower Mincemeat)
Follow same instructions as aloo kheema by replacing potato
by 1/4 cauliflower
Dish 4--Patta Gobi Kheema (Cabbage Mincemeat)
Chop 1/4 cabbage finely & follow same instrucions as
aloo kheema.
These can be cooked & refrigerated for 15 to 20 days. It's
always better to add vegetables on the day of serving to get
a fresh taste. Mincemeat can be cooked, divided & frozen.
Yet another dish could be made by adding 1 cup mixed vegetables
(1 inch cubes of potato, carrots, cauliflower & peas) to
one portion of mincemeat (i.e. 1/4 kg of mince meat).
